I loooooved anything illustrated by Trina Schart Hyman (and still do), although I think the one I checked out of the library the most was The Water of Life. Oddly, we never bought any of her books--I keep thinking I should hunt down used copies of all her fairytales.
Text-wise, all the picture books that stick in my head I read as an adult.
